This is a very easy meal to make that you can prep the night before or day of and has healthy written all over it. This works with pretty much any type of fish, the parsnip wedges are great carb substitute for regular fries or rice and Kale is just magical :-).
Ingredients
1 Piece of Fish
A nice handful of kale
1 and a half pieces of Parsnip
Sea Salt
Olive oil
Black Pepper
A Pinch of Crushed Red Peppers
Directions
1. Pre-heat oven or toaster oven and set to 375, put aluminum foil on a tray and glaze with a little olive oil.
2. Cut Parsnip into pieces that resemble french fries, season with pepper and place in oven for about 20-25 minutes 3. Place olive oil in pan, place Kale in pan, season with sea salt, black pepper and crushed red peppers then cook for about 2-3 minutes on medium.
4. Coat pan with a little more olive oil, make sure your fish is completely thawed out, cleaned then wrap in paper towel to soak up all the water out of the fish.
5. Season fish with sea salt & pepper, place fish in pan and cook until golden brown or about 3-4 minutes per side.
6. Eat & enjoy
